Sarti Rosa, a new Italian aperitivo, has been gaining popularity in Europe and is now available in the U.S. This drink tastes like a tropical Aperol but with less bitterness, and it has a hot pink, fruity flavor.
Food influencer Hailee Catalano tried Sarti Rosa and said, “It’s fruity…definitely doesn’t have the bitterness of something like Campari,” and she added that “it’s tasty and refreshing, especially in the summer—I’m a fan.”
Another food creator, Erin O’Brien, described it as “The spritz of the summer” and said it tastes like a mix of blood orange, mango, and passionfruit.

To make the perfect Sarti Rosa spritz, use the classic 3-2-1 formula of prosecco-aperitivo-soda. Fill a goblet with ice, add 3 ounces of chilled prosecco, 2 ounces of Sarti Rosa, and 1 ounce of chilled sparkling water.
For a fun and colorful way to entertain, consider hosting a spritz bar with a selection of aperitivos, including Aperol, Sarti Rosa, St-Germain, Campari, and limoncello. They offer garnishes like sliced oranges and fresh mint sprigs to complement the drinks. To set up the bar, fill an ice bucket with plenty of ice, chill a bottle or two of Prosecco and some plain sparkling water, and provide a jigger or measuring cup for easy pouring of the aperitivos.
A similar drink to Sarti Rosa is the Hugo Spritz, made with St-Germain instead of aperitivo. Alternatively, one can try a Stavros, which is made with rosé, elderflower, lime, sparkling water, and fresh rosemary. For the Hugo Spritz, use 3/4 ounce of St-Germain and balance the drink with 4 ounces of Prosecco if desired.
