Scientists Find Secret to Clear Ice Cubes - clear ice
Experts tested various types of water in a lab setting.

Experts have revealed the secret to making crystal-clear ice at home. To find the best method, they tested different approaches side-by-side in a lab. They compared the performance of various types of water, including spring water, distilled water, tap water, and boiled tap water, in standard ice cube trays after freezing overnight.

None of these options produced perfectly clear results, but all types of water yielded clear edges and cloudy centers. The experts then used a directional freezing ice cube tray, filling each column with a different type of water, and froze them overnight. They found that spring water produced the clearest results, while tap and boiled tap water were fairly clear, aside from a few bubbles and cracks.

Distilled water, however, failed to produce clear ice, instead appearing to be filled with cracks running down the middle of the cube. The experts also compared the taste of whiskey served with clear ice made using a directional freezing tray and a standard ice tray. While there was no discernible difference in quality, the drinks with the directional freezing tray cubes tasted stronger.

The benefits of clear ice are mostly aesthetic, but some bartenders and whiskey enthusiasts claim it melts more slowly, keeping drinks stronger for longer. Some professionals also believe that cloudy ice can affect the taste of drinks due to the presence of impurities. However, in their testing, the experts found any taste difference between clear and cloudy ice to be negligible.

Directional freezing is a process where water freezes from top to bottom, allowing any sediment to settle at the bottom and leaving the top clear. A directional freezing ice cube tray has excess space under the mold, enabling the creation of perfectly clear ice. This method was found to be the easiest way to obtain crystal-clear ice.

Using a directional freezing ice cube tray can make a difference in the appearance of ice, and some may appreciate the slower melting time. For those who value the aesthetic appeal of clear ice, this method can be a simple and effective solution. As one expert noted, the slower melting could be due to the difference in surface area between the different shapes of ice, but the exact reason is not the primary concern for those seeking to create clear ice at home.
